Donna’s Spaghetti alla puttanesca

The ripe tomatoes brighten the pungent flavors of this Italian classic spaghetti alla puttanesca. I love this group of flavors. The pungent garlic and the hint of salt from the capers are complemented by the tangy-sweet tomatoes.  Even though more attention is given to their delicious flavors, this dish’s ingredients are not short on their nutritional content.

Tomatoes are a treasure of riches when it comes to their antioxidant benefits. In terms of conventional antioxidants, tomatoes provide an excellent amount of vitamin C and beta-carotene, manganese and vitamin E. Researchers have found that allicin, a chemical found in garlic that gives it its flavor, could be used to fight cancer. Other studies suggest that garlic has many beneficial effects on the heart and may lower cholesterol and blood pressure. To make this dish even more appealing to those of you avoiding gluten is the gluten-free quinoa pasta and remember quinoa is a complete protein. Serves 3-4

Ingredients:

  • 4 cups of tomato sauce
  • 2 small cloves of garlic
  • ½ of an onion
  • 1 cup of capers
  • 1 pound of quinoa spaghetti
  • 3 TBLS of olive oil

Directions:

  1. Sauté’ garlic and onions in olive oil
  2. Add capers and tomato sauce
  3. Follow directions on spaghetti for cooking
  4. Mix all ingredients together.

Ingredients:

  • 4 cups of tomato sauce
  • 2 small cloves of garlic
  • ½ of an onion
  • 1 cup of capers (Kalamata olives)
  • 1 pound of quinoa spaghetti (any pasta of your choice)
  • 3 TBLS of olive oil
