Donna’s Mixed Green- Brussel Sprouts Salad

If you want a delicious super nutritious salad look no further than this one. The stellar list of ingredients includes, watercress, red onion, tomato, cucumber, and Brussel sprouts.  If you enjoy the taste, you’ll want to include Brussels sprouts as one of the cruciferous vegetables you eat on a regular. They have many health benefits including some special cholesterol-lowering benefits.

It is no wonder watercress has a reputation as a healing herb. It has more than 15 essential vitamins and minerals. Vitamin K is one of its most prominent nutrients. Others include iron, calcium, manganese, Vitamin C and Vitamin A. Antioxidant flavonoids like B- carotene, zeaxanthin, and lutein protects from lung and mouth cancers. B-complex vitamins include riboflavin, niacin, vitamin B6 and thiamin are among this plethora of disease-preventive properties. Watercress is very low in calories and contains phytonutrients and antioxidants with many disease-preventive properties. Serves 2-3.

Ingredients:

  • 2 cups watercress
  • 1 small cucumber
  • 1 tomato
  • ½ of a small red onion
  • 1 cup of Brussel sprouts
  • Dash of Himalayan sea salt and pepper
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of apple cider vinegar
  • 1 teaspoon of lemon juice

Directions:

  1. Quarter the Brussel sprouts and steam them until slightly soft.
  2. Chop the rest of the vegetables and toss all ingredients with olive oil and vinegar.

Ingredients:

  • 2 cups watercress (any green leafy vegetable)
  • 1 small cucumber
  • 1 tomato
  • ½ of a small red onion (any onion)
  • 1 cup of Brussel sprouts
  • Dash of Himalayan sea salt and pepper
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of apple cider vinegar
  • 1 teaspoon of lemon juice

Add a protein of your choice.
