Donna’s Quinoa with Mixed Vegetables 

This dish has a stellar list of ingredients. What a magnificent way to feature so many ingredients without letting any one ingredient overpower the others. Not only do the ingredients taste great, they offer numerous health benefits. They are full of antioxidants and abundant vitamins and minerals.

Artichokes have been used as a digestive aid since ancient Egyptian times. Today, we know they contain nutrients that deliver several health benefits. They are packed with antioxidants, making them incredible defenders against cancer, aging, heart disease, and illness and they boost the immune system. Serves 2-3.

Ingredients:

  • 1 cup of quinoa
  • 1 cup of cherry tomatoes
  • 1 cup of artichoke hearts
  • 1 cup of roasted red peppers
  • 1 cup of kale
  • 2 cloves of garlic
  • ½ cup of fresh basil
  • Dash of black pepper & Himalayan salt (optional)
  • 2 TBLS of olive oil

Directions:

  1. Cook quinoa according to directions on package instead of water you can use vegetable stock id choose.
  2. Steam kale until soft
  3. Chop all vegetables, sauté garlic and tomatoes in 2 tablespoons of olive oil for 5 minutes add the rest of vegetables, sauté for 10 minutes
  4. Stir in the quinoa

Ingredients:

  • 1 cup of quinoa
  • 1 cup of cherry tomatoes (any tomatoes)
  • 1 cup of artichoke hearts
  • 1 cup of roasted red peppers (any peppers)
  • 1 cup of kale (any leafy green such as spinach, swiss chard or arugula)
  • 2 cloves of garlic
  • ½ cup of fresh basil (any herb you like such as, parsley, rosemary, mint or sage)
  • Dash of black pepper & Himalayan salt (optional)
  • 2 TBLS of olive oil
