 Donna’s Vegetable Woon Sen

 Woon Sen or bean thread noodles are a popular Thai dish. The noodles absorb the rich flavors from the vegetables and tamari sauce. This dish is easy to make and yet not short on flavor and nutrients. Serves 2-3.

Ingredients:

  • 2 cups of Woon Sen Noodles
  • 1 cup of zucchini
  • 1 cup of carrots
  • 1 cup of red or yellow peppers
  • 1 cup of broccoli
  • ½ cup of onion
  • ¼ cup of tamari sauce
  • ¼ cup of sesame oil
  • ½ cup of vegetable stock

Directions:

  1. Chop vegetables
  2. Slightly sauté’ vegetables in sesame oil (keeping them crunchy)
  3. Cook noodles according to the directions on the package (you may want to cut the noodles)
  4. Strain noodles and add them to the vegetables
  5. Add vegetable broth and tamari sauce to the noodles and vegetables

*Modifications

  • 1 cup of zucchini (any vegetable of choice)
  • 1 cup of carrots (any vegetable of choice)
  • 1 cup of red or yellow peppers
  • 1 cup of broccoli (any vegetable of choice)
  • ½ cup of onion
  • ¼ cup of tamari sauce
  • ¼ cup of sesame oil (olive oil)
  • ½ cup of vegetable stock
