Donna’s Veggie Sandwich

This sandwich proves that a vegetarian sandwich can be as satisfying as any and more likely to be higher in nutrients so it’s worth a try. The leafy greens vegetables are high in vitamins and minerals and are very alkalizing. The cucumber slices contain potent nutrients that help cleanse the body and keep the digestive system working properly, such as vitamins A, C, E, K, B, phosphorus, calcium, iron and potassium, magnesium, manganese, and selenium which help support the immune system. Since they have high water and low sugar content, they are one of the best kidney cleansers. As a diuretic they flush toxins out of your body, help prevent bloating due to water retention, and wash the kidneys and bladder of debris and stones. Serves 1-2.

Ingredients:

  • 2 slices of gluten -free bread (my favorite -Little Northern Bakehouse)
  • ½ cup of sliced cucumbers
  • ½ cup of arugula
  • 2 slices of tomatoes
  • 2 slices of red onion
  • 2 slices of avocado
  • 1 tablespoon of veganaise (a plant-based mayonnaise)

Directions:

  1. Create your sandwich how you like, you may want to toast the bread.
