Hailed as the “immortal health elixir,” kombucha has been regarded as a panacea for over 2,000 years. Thought to have originated in Asia, kombucha spread from the Far East to Eastern Europe with its legendary reputation as the tea that promotes wellness.  Today, kombucha is a popular staple among the health and wellness crowd all over the world.

 

The secret to kombucha’s allure begins with its bacteria culture, also known as a SCOBY (symbiotic culture of bacteria and yeast). This rubbery organism is placed in sweetened black or green tea and left to ferment for about a week in a glass container. As the culture digests the sugar, it produces a plethora of organic acids, enzymes, amino acids, B vitamins, and vitamin C.
